I googled the title "Why Jesus said "do not tell anyone..." and a series of different interpretation on why Jesus said what he said...
1. http://bible.cc/matthew/8-4.htm
2. http://www.heartlight.org/wjd/matthew/0424-wjd.html

They are many answers to The "why" issue depending on which angles we are looking at.
Another answer could be this - When Jesus told the lepers not to tell anyone and go to the Priest and perform a sacrifice/ testimonial like what Moses instructed it is because Jesus wanted to show an example that He is here to fulfill the LAW of God the Father which was instructed thru Moses by God himself about sacrifices and testimonials, hence the reason why Jesus had instructed for the Lepers to do so. The way I see it, Jesus has even "kau tim" the LAW for us because He knows we can never ever fulfill 100% of the LAW which God has set during the old testament namely the old covenant. ( hope i am making some sense here)
Matt 17: 9
As they went back down the mountain, Jesus commanded them, “Don’t tell anyone what you have seen until the Son of Man[b] has been raised from the dead.”
In Matt 17:9 - Jesus said again, not to tell anyone on what happened about the transfiguration until His death and is raised from the dead. I am sure there is a clear reason/various reason on why He said what He said...
